If you are not going watercooling, the 350D is pretty big though...  If you want something smaller, take a look at the Silverstone TJ08-E... It's a very nice mATX case, and cable management is pretty easy on that case.

Kingston and Corsair RAMs are both equally reliable... and both of them should perform identically (Value RAMs of course)

Not much disadvantage of mATX boards, but note that fitting a giant air cooler (such as the Noctua NH-D14) may block the RAM slots.  (Can be overcame by using a low profile RAM)

You're right, it's the processor that's going to be the biggest upgrade.

If it's a HD 5850, then it will be more than enough to run Sims 3 on highest settings.
