Yup. Look under Kernel tab in the generator page. Suggest you read each kernel page over XDA coz some of them is a bit complicated to use.

the Kernel is independent from the ROM. You can flash other kernel after done cooking @ kitchen (if you decided to try other kernel). Can mix and match. Just watch out for the lagfix when changing kernel.

SGS will lag some time down the road because of Samsung RFS file system (Not very apparent in Froyo 2.2.1 and Ginger ROM) . Then some developers create the lagfix which will convert the file system (RFS) to others FS like the one you are going to learn EXT4.

All this conversion and tweaking of FS is done on Kernel level. Different kernel has different method of application although not a major difference. So, pay a particular attention when changing Kernel if you apply the lagfix. If you're using RFS, then no need to worry.

Basically for Android, you need to Root to gain administrative access of the phone (viewing system folders, accessing system operationes etc.) and access paid market. No need Root to Ahem.

Lagfix is for SGS only coz of Samsung proprietary file system (RFS) which will lag the phone after months of usage or when it reach certain size of storage space (subjective, no specific size).

If you're running Custom ROM of Android version 2.2.1 and above, you can survive without the lagfix. Only applicable for 2.2 and below.

All custom kernel for SGS have lagfix options. Its up to user whether to activate the fix.

It should be vol up or vol down + home button + power

If you manage to get into recovery, try wipe cache and dalvik before factory reset. Worst case, reflash.

No need to find Froyo boot loader. I did reflash back to Froyo and still retain JVK bootloader until now. Coz the DXJPE from Hardcore blog does not have the boot loader. EzBase Rom got boot loader.

You have to flash the full JVB first and let it boot. Then follow the rest one at the time. No repartition. IMHO, CSC is not that important unless you wanna use one of the country specific customization. You can leave it to JVB CSC.

For me, I still flash back the DXJPA CSC coz of the automatic Malaysian telco settings.
