I don't use many Sense widgets or the built-in apps, so I didn't really miss it much.
The repeated Sense crashes were what eventually drove me to give up on the one brilliant feature--the smart dialer.
I still find CM noticeably and consistently snappier, most visibly in Angry Birds Seasons, which bogged down on both the stock Eclair and Froyo.

I don't use task killers. Sense just crashes and relaunches after every so often.
When it sill did it after I moved to Froyo, finally decided to give up on it.

For the built-in A2SD, system apps or those not written to allow app2sd will not let you store them on external memory.

The Vodafone-based ROM that I used felt zippy, no reason why the unbranded ROM should be slow.
The only thing that felt really slow was Angry Birds, which was almost unplayable. The rest felt faster than Eclair.

3G rock solid with the 47.51.35.17U radio. Never been better for me.
I used to lose 3G nearly every night and won't get it back until the morning.
Now, I might lose it once every couple of days for like a couple of minutes tops.

The APNs are listed in the stickied FAQ, but if they're in your APN list it should be fine. Just check that they are correct.
Were you able to send/receive MMS prior to flashing the CM ROM or is this your first time trying?
Try disabling Market Enabler if you have it on. Should not be related but it eliminates one more thing.
