Ingredients:
. 1 1/2 cups butter (or buttermilk which is better
. 1 cup rolled oats
. 2 tablesp. honey
. 2 tablesp. vege oil
. 1 cup whole wheat flour
. 1 teasp. baking powder
. 1/2 teasp. baking soda
. 1/4 teasp. salt
Methods:
1. Preheat oven to 175 degrees C.
2. Combine butter and oats in a saucepan; heat just until warm; set aside.
3. Grease muffin cups.
4. In a large bowl, combine honey and vege oil with oat mixture.
5. Combine flour, baking powder, baking soda and salt; stir into wet mixture.
6. Pour batter into prepared muffin cups.
7. Bake in preheated oven until lightly browned, about 30 minutes.
Serve warm.
-makes about 8 cups of muffins. try it!
