and speaking on the issue of egg albeit being a good source of complete protein with good NPU, not all vegetarians consume eggs. also, with the high fat content of egg, how many would a person need to consume to fulfill his/her daily protein intake? it wont be wise to disregard the fat content will it?
altho the NPU values for beef and chicken may be lower than egg, the quantity of protein which they provide with each serve make up for it. with the ratio of essential amino acids differing with different meats, it is still wise to consume different meats.
this as compared to a vegetarian diet where you have to balance a few types of nuts and legumes just to maintain good amino acid intake. this is not mentioning other nutrients that come with meat that will need to be compensated for, with just one example of iron.
it is known that the body absorbs heme iron better than non-heme iron. which means that you would have to take way more iron in a vegetarian diet just to fulfill the iron requirements.
