QUOTE(pltan @ May 14 2009, 01:46 AM) Cut, texture, juiciness, marbling, obviously it needs to be cooked to your liking (medium rare for me)....a proper steak should be eaten 'Au Jus' i.e. in it's own juices and no additional 'sauces/marinades'. That's not to say I don't enjoy a nice black pepper, or a gorgonzola steak at some points. But for the real steak connoisseur it should be 'au jus'. For a good steak, look for the cattle breed, grain or grass fed, doneness and aging. You have top breeds like Wagyu, and Black Angus which is available at must upmarket steak houses.Sounds like you're a food fan of my own design. If you haven't been you have to try Jake's, you'll not be disappointed. Great selection of US, Australian, NZ beef, and wagyu as well. Someone already mentioned Morton's in Singapore....great all around steakhouse chain, I used to visit the one in Boston from time to time during my University days, but it's not cheap. We're talking 100SGD a steak at least and it comes with nothing but the meat. A baked potato is 20SGD as well. Took a lot of clients there too If you're travelling.... New York - Peter Luger.... the best in the WORLD Something different, look for aged meat, Aging tenderizes the meat and enchances the flavor, very few steakhouse bother as this process requires storage and cash, if you're looking for it, you can find it at Prime (Le Meridien) or Qba (westin). For good and properly cooked steak, recommend Qba of Westin, Prime of Le Meridien, Nero Vivo on Jalan Ceylon, Chiaroscuro at Jalan Bedara, La Terrasse French Restaurant on Jalan Berangan and Bruno at Jaya 33. Of course, premium price. If you prefer the local spin of steaks, tenderized meat+welldone+ soaked with your mushroom/black pepper sauce, don't waste your money by going the above. Can try The Ship, Mama Chop papa gril, Victoria Station This post has been edited by db07mufan: May 14 2009, 04:13 AM |
