You can go to this site to learn to jailbreak (unlock) iPhone. Note that this is for the 2G iPhone. Upgrade to firmware 2.1 first using iTunes 8.0 & above. And you can't update from itunes once you've jailbreak your iphone right?

There are still some problems with 3G iPhone and the unlocking is more complicated.

It is not illegal and there are many applications that can be downloaded from Cydia & Installer (both are like Applestore.
