the problem with plugins is it'll alter the original audio source, so as you know, altering the original signal source will introduce quite some artifacts. not that it's shit, the audio source has to be good too ala good mic/soundcard. also altering the original source means you're actually doubling the original source, so the transients/timing/intonation will be the same although the pitch will be altered, it'll result in way more phasing issue than just singing another part.
regarding the professional field, yes there are people who use plugins or simply digital processor but not for the proper backing vocal type of thing, they're used to create special effect e.g. pitch shift an octave down can create a special bottom harmonics for the main vocal. similar thing goes to guitar harmonizer pedal, you can create special sound but you can't recreate double lead guitar sound.
