U can start separating them when u see them leaving the mom's back
I suggest u to go and get coco fiber as soon as possible and use it for both the mom and babies

Guppy tank looks something like this

Height for me i dun care, i keep my adult in a container which she is able to climb up if i din cover the lid
As long as i cover it securely no nid worry lo

For mine i dun have problem of her running out of the enclosure cause she is so docile
For u i think its better to get a tall 1

In the wild their territory are lots larger than my 1.5feet tank
