 RAMLY burger stall vs DIY at home, why got difference? Secret ingredients?

Was wondering why those ramly burger stalls can survive or got difference, if we can cook ourselves at home .... all the same ingredients eg. ramly burger, egg, buns, ketchup/chilli sauce, etc. (all available from supermarket).

Got different ingredient or secret?

Yes, some stalls have some oil and tomato sauce all over it. It depends on the location. A stall near a busy road will taste like exhaust. A store near a palm plantation will taste like oil. But the basic metallic taste is there.

if you buy outside, you dont need to buy the ingredients, prepare, cook and wash. you pay them to do that for you

no...the secret of ramlys is the pan they use! know what? thats the grilling pan they use to grill dunno how many burger meat already...

unless u have a pan only for burger grilling...then ur burger will be nice... drool.gif

look at the way the made the meat, and the buns.

notice what they pour on the pan and heat up the buns a little before putting the rest of the stuff. biggrin.gif

it's not just the pan, the ingredients and technique are there.

however you WILL get the similar taste if you are doing with the exact same stuff.

heck i make my own burgers, i prefer them more than Ramly's. smile.gif cheaper also. biggrin.gif

Ramli burger stores are ripoffs IMO. Here I am charged RM 3.00 for a piece of burger, the bread, mayonnaise, ketchup, ajinomoto, and pepper. For an egg I must add 50 sen and for a piece of cheese I must add RM1.

I think the cheeseburger from McD is more worth it at RM 3 only. Fish o fillet is only Rm4.

the combination/amount of sauces used. Just notice the sauces used on your fav stall and you can probably get close to the taste you want.
Of cos, the grill plate is also making the difference...

haha. this i agree. which is why i don't buy McD burger unless i have no choice, i rather pay for their chicken. that also usually when there's no choice, cos Malay stalls / restaurants have cheaper and nicer chicken to begin with. biggrin.gif

tried the mega mac the other day, it's just big mac, 4 pieces of THINNER beef patty.

Ramly burgers do taste good. IMHO, like many already said here, the difference in taste is due to the cooking technique and ingredients.

That said, I don't dare eat Ramly burgers too often anymore. I looked at the ingredients of a frozen pack of Ramly burgers in the supermarket, and realized its about 20% fat. Worried about my cholestrol level.. so now I eat it only once in a long while (and really enjoy it when I eat).

i would pwefer ramly burger or any stall made burger... its taste good then mcD burger... its funny that i even heard a song about Ramly burger when i listened to singapore radio... do singaporean really luv Ramly burger???

i have all the same stuff just like the ramly store , only thing i dun hv is the pan,

and yeah, the taste is the same, but i cant do a ayam special properly coz i dun really noe how to balut the meat n the egg well XD biggrin.gif sweat.gif

no, that just you attempted a home made burger, or attempted to be cook like theirs.

being a sinner myself as a decently loyal roadside burger stall patron, i've observed that their taste varies from stall to stall.

so you'll just have to find the stall that suits you most.

yep... ramly burger dont exist actually...its just that the meat or the bun and its ketchup branded as RAMLY (RAMLY product)... u can find its distributor sumwer at back of chow kit road...if am not mistaken...

i dun know much bout the banned stuff...but from wut i know...any kind of meat cant travel from m'sia to singapore...there is once, i and my gurlfren had to smuggle meat just for picnic at singapore...sengal... sad.gif

seriously la. assuming this situation - my stall got Ramly name plastered all over but one day everything price go up but this new beef patty brand call goldfries come up and it's 75% the cost. so i use it la, my patty different but people will still call it Ramly burger. smile.gif

just by looking at the patties' color i can differentiate whether it's Ramly or not.. well i guess most people can do this too..

tried other stalls with ramly posters at the stall, but using "CINTA" brand instead.. the beef patty is sweet.. omg

They got add some stuffs like seasoning oil and some pepper. Also spiced up by mayonese and vege.

I have tried cooking Ramly at home and the main thing that affect the texture and taste is the heat. You must use low heat. At the begining, apply some planta as oil. As it cooks, the meat itself will release oil due to the fats inside. Its critical to remove as much oil as possible from the meat. Thats why u see the burger seller keep pressing them on the pan. The oil taste nasty. When you cook at low heat, it will take longer but prevent the outside from getting overcook while the inside will be cook more throughly.

The Secret Recipe of Ramli which makes me going there instead of all others, etc Otai ( New One, taking over lots of Ramli Business ) .. is theeeeee .....


Maggi Soy Sauce =,= .. And I noticed that at a Ramli stall that I visited pretty often last time, their meats are much more delicious .. what he does is .. he slice the meat in half, open them up and grill the inside, then throw in pepper, MAGGI soy sauce, etc etc.

Grilling on the outside and inside just makes it more ... more .. more .... nice to bite. tongue.gif

Ramly burger is not just Ramly burger for some stalls... Like one of the stall near my place, it's just different from others... which I couldnt say anything.. He success in selling burger... I saw them from one stall turn out to become a bugger stall that sells not only burger but nasi lemak. And guess what, it's FULL HOUSE! There are only 2 stalls that I have tried so far that sells good ramly burger with really secret recipe (its not kung fu panda) the one in bangsar road side, he told me he put some secret ingredient in the middle of the patty, so when you chew, it's different feeling. And another one is in Tmn Seraya near Tmn Muda, which is in ampang or cheras. The border of both. This is the one that near me... If you ever pass-by, just try it..

I anti ramly burger when they are near concert hall. So stupid that they just give you 2 bread with one patty and that's it.. and hell expensive for RM4!!@#%^!@#@!*

So that's my Ramly experience... I have tried quite a number of it... this is the only 2 got me remember...

This is the correct ingredients to cook Ramly burger...Pepper, Chilli powder, Lea&Perrin (Worchester sauce) and English Mustard for cooking the patty (U HAVE TO SLICE THE PATTY IN HALF TO ADD THE Lea & Perrin AND mUSTARD, do not burn the mustard just apply and fold the patty back). Mayo, Brown Sauce, Ketchup and Chilli Sauce for serving.
