I've only attended one tour in recent memory. Not Apple Holidays, but in Australia blue mountains tour. The tour guide was bilingual -- mandarin and english. He memang can speak english well, BUT ... he doesn't do bilingual explanations during the bus ride, etc. i.e. he only speaks mandarin to everyone when telling them about the sights, how long you should spend in an area, etc etc ...
