There is a concept of permissible % of alcohol level in food (further breakdown for naturally occurring vs not, finished product vs ingredients, etc.) when it comes to halal restriction.

The naturally occurring guideline covers the food ingredients with naturally occurring alcohols as part of the production process like soy sauce, vinegar, some fruits, etc.
They generally don't have a high enough alcohol content to intoxicate even at massive amounts consumed.
