Actually, not a bad idea if it yields good result. Nowadays wagyu is slapped on anything but the quality range is so wide. You'd have to dig into the details to know but sometimes these restaurants won't disclose. Having our own and specific breed would create a distinctive supply that's easier for the market to digest.
