Westgold is my household butter now. Good enough at a nice price point

Where the heck you get your info from? The ingredients list on farm fresh butter says minimum 80% pasteurized cream and salt (for the salted version).

Anchor is low quality butter btw, the 82% cream is definitely questionable based on the spitting and splitting. I've had similar experience.

There's a reason fat tastes so good to us, its beneficial.

Fat has been demonised for so long, when its not that bad actually. Just make sure to take it in moderation.

I said often, not always

Its possible they don't do any replacement, then the taste/texture would be quite different. Do you notice a difference between the 0% and 10%? If got difference, then I think you're safe. If you don't feel any difference, then definitely the fat is being substituted with something.
