for me i rather use induction over gas stove any time. overall it is safer compare to EV with a battery.

only those who lazy or refuse to learn to cook properly using induction are the one that claim it is inferior to gas.

if u want dai chow style. normal gas stove also not able to do it, u need those industrial high pressure gas stove. similarly, electric cooker also have industrial range which can heat up the wok in a short time for even more efficient stir fying.

yes, you need the same setup as dai chow to be at least have wok hei. not use gas automagically will get it. u use normal gas stove with puny fire, boil 5L water also need 10-15 min. but claim got "wok hei" when stir fry char koay teow, thats just placebo effect.

not really, u will use more gas than electricity actually. pan are heated faster and cooking that require more heat like frying, deep frying, searing, boiling water all faster, you might end up just using the hob at average 1000W for maybe 1 hr a day cooking 3 meals a day.

Pros for induction hob:

My suggestion, better to get cooktop with both induction n ceramic.

obviously. they cook ckt on a non stick aluminum pan with induction base with less oil and expect wok hei... WTF??


if you use carbon steel(the best), cast iron or even stainless steel, season it, use high smoking point oil, pre heat 99 and fry away, see can wok hei or not.

erm.. are you sure? how much u spent on your:

1. gas stove
2. tong gas
3. gas pipe
4. the regulator that connect the pipe and tong

from my experience gas stove rarely many issues. is the 2, 3 and 4. best you check every year if there are leaking from those. from the 5 years using gas stove, and change few times those. sometime the tong the head also issue, no gas come out, or got leaking, need to ask the person swap again. if u want to be ignorant of leak, then no issue, can still work.

so far, i using a chepo sub RM300 portable induction cooker, 6 years already, not yet change anything, use daily for cooking dinner for 2 and boil water.

that is your problem. u use a non stick (most likely aluminum) pan. if u want to fry egg, make pan cakes, that fine. but if you want to fry rice get a proper wok pan like..
