Stainless steel is expensive
The workmanship even more expensive
If you want to skim the price, they can.

The supplier will use low grade stainless steel (grade 200 something)
The welding will be subpar (which it will get rust after few years)

If the area you put the grill far from any rainwater splash or environment hazard, a few mm thickness aluminium is also good to last for very long time. It is just most people like metal shiny appearance but aluminium can't afford be consistent be shiny as the oxidize aluminium is the metal core protection.
