You need to do some math work to get the accurate Tnb usage. Jsut take self consumption + import.

For self consumption, u need to take the app generation minus the Tnb nett export. Thst will be ur self consumption.

north panels vs south panels, usually they peak at different months of the year. But, you will need to know which part has longer peak than the others. Mine is also north and south, with some panels on east and west too, and for my case, the north panels generated more since the beginning of the setup two years ago. The average panels on the north is 1.22MW (for each panel) and the average for panels on the south stands at 1.17MW (for each panel). That is about 50kw difference for each panel. and i have 11panels on the south, meaning to say, the position put me on  the disadvantage of 550kwh since the beginning of the setup till now.

What do you call an offgrid system that directly uses Solar Power to 240V and if the load exceeds the solar power , it will take the additional power from the grid without any battery/or small battery involved.

But NEM 3.0 now ended, so unless there are new scheme announced, else the only option is Solar + hybrid + battery?
