That "free shuttle" bus is for shuttling to/from Airport Express train station nia, which means you'll need to take the Airport Express, ie the express train.  That also servicing major hotels nia la..

Arrive HKIA, walk out from arrival hall, turn to your right, the bus stops are there.  Take bus A21, HKD 33 to Dragon Hostel, alight at the no. 6th stop - Mongkok MTR station.  Check dragon hostel website for map and direction.  You may call up DH to fetch you from the bus stop.

No problem check in early if the room is ready (b4 2pm).  Or you can leave your luggage and go for lunch first.  I suggest go to Stanley (instead of Langham Place) before The Peak.  Both Stanley and The Peak on the HK Island side, and from Stanley can take bus no 6C, alight at bus stop near Garden Road.

Since Langham Place is so near to Dragon Hostel, can go there may be on Day 3 - either b4 NP/Tung Chung or after.

In my opinion, your itinerary a bit messy in the sense that for me, I prefer to go for one day in Kowloon and walk around the nearby area then another day at HK island then walk around the same day.. if not it will be like costing a lot for me to travel from hotel to HK island then back to Kowloon area..

I would go in the following way to cover all the attractions:
Day 1
Check in at 2pm
Have lunch at Mongkok  (Kowloon - near your hotel)
Fa Yuen Street + Ladies street  (Kowloon - near your hotel)
Go to Langham Shopping Mall  (Kowloon - near your hotel)
Avenue of Star and Symphony of Light  (Kowloon - Take MRT to TST)
Temple Street (Kowloon)
Day 2
Disneyland
The Peak in the evening (HK - you can take cab from Central till the tram station for around HKD20)
Day 3
Golden Bauhinia (HK -Wan Chai, it is just near to Wan Chai Pier of the Star Ferry)
Ngo Ping 360
Tung Chung Citygate Outlet
Day 4
Ocean Park (HK)
Lomography shop at Causeway Bay (HK)
Lan Kwai Fong (HK - Central, another option of HK night life will be Wan Chai)
Day 5
Stanley (HK)
Walk and shop around your hotel
Plane depart at 8.30pm

Tues 10.30am HK -> Macao (which is the most convenient n cheapest to go from airport to Macao?

There is whole street selling biscuit near to St Paul Ruins.. you won't miss it

What's nice to eat in macao?
Portugeese Egg Tart, Portugeese cusine - there is a pudding (but i don't know what is its name in English) is a must try! Super nice!

Go to MGM grand and watch its water symphony show at 8.. Go to Casino/ Venetian/ Macau tower before it closes at 9p.m/Take a bus infront of Grand Lisboa to Taipa (sit until it return back to the same bus stop) to see Macau at night for fun

Cold weather, but not the coldest (as in Jan/Feb).  I would prepare "layered clothes".  Weather changes through out the day, can also be windy.

NP360 is the "name" of cable car, to go up to Ngong Ping Village, and see the Big Buddha.  Yes, you can go there on arrival, take bus no S1 or S56 from airport to Tung Chung Station, HKD 3.50.  I remember reading about lockers for luggage storage at Tung Chung (can't remember details, pls search yourself if required).

Do you mean if you have time to visit NP before check in?  Are you planning to go to see the Big Buddha, follow by shopping at Citygate Mall?  If so, check in can be after 2pm, just let Stanley Fan knows what time to expect you(to keep the room for you).

One suggestion re visiting Ocean Park and Golden Bauhinia Sq:
I would go to Golden Bauhina Sq in the morning, follow by Ocean Park.  From Dragon Hostel, take any bus that heads to TST ferry terminal(as display on bus) at bus stop along Nathan Road.  (may also visit AOS, just next to ferry terminal).  Take the star ferry to Wan Chai Ferry terminal, it's a short walk to the Golden Bauhinia sq.  After that, can take bus to Ocean Park.

IMO, why go from Disneyland to AOS and trying to catch the Symphony of Light show?  Do stay at Disneyland and enjoy the fireworks!

A little bit more on Stanley, it is advisable to go stanley in the Morning for its market.

There is Flag Rising Ceremony at Golden bauhinia every morning at 8a.m and it is just short walk to star ferry pier. After watching the ceremony and photo taking, just take MRT to Admiralty and there will be counter selling package for Ocean Theme Park.

I be going with a group of friends, but all the iternary jobs were fall under me.. 

Well, get your urself a travel book should be helps alot as they given all the information, so meaning you may draft where to go first and then use the book guideline to help you reach the destination.

I have read out all the necessary and bookmarks on the pages so i may just reference how i can arrive the destination.

if dont know how to go, go to the nearest MRT then take cab..

Well, would simply get you easily & smooth when you travel urself.. unless you certainly be sure at every information gathered.
My flight will be depart at 1PM, well i had seek for the advice here so much and is matter of putting into according to our own date & time cos certainly attraction is open with specific hours or probably not advice to go during peak hour, taken into consideration you could avoid alot of troubles.

As much as i know most of the attraction's woul to be reachable via MTR either Bus.. so pretty much easier i think based on what i had found. Confuse... well, as long u know the languages bet me it wouldn't be so hard.
