Then we plan to have a 1 nite stay at Macao venetian
so it's like suffer few nights to enjoy 1 nite.
Oh yah, any suggestion that I can maximise the use of the first 3 days unlimited MTR rite using the octopus card?

more things to see. In Disneyland the rides are more for kids. Even the locals themselves skip D for Ocean Park.
Go to Lantau Island sit the Ngong Ping 360 cable cars and see the Big Buddha, go to the Peak, go to Macau, but Macau is really small, you onli need a day, unless you want to gamble. In Macau,go to the Saint Paul ruins,fisherman's wharf, eat 双皮奶,猪扒包( I hope you know chinese:P), eat portugese egg tarts, go hotel hopping just to see the amazing decor....also try to go to the surrounding islands in HK for seafood. Every night at 8pm there will be a light show at Victoria Harbour, it is ok for first-timers. If you want to take night pictures, bring a tripod! Remember to go to Temple Street. I didn't really like the Ladies Market but you can go take a look, but remember to haggle! Does your bf like gadgets/electronics, there are many stores around there that sell things really cheap. Owh and you must take the ferry at least once!
