windowserver is a macOS process that is responsible for rendering graphic on your desktop. not related to microsoft office

compared to windows, macOS will use as much RAM as possible

how much ram are we talking about?

mine windowserver takes up about 1.8GB of RAM, that's running a 6K and 4K display

hmm, I should put it better in this way.
windowserver is responsible for communicating with every program to display the content on your screen (Microsoft office, safari, Dock, Desktop, top bar, etc.)
it handles all the task of rendering and cache all the visual stuff (app, websites , windows, etc.), so if let's say microsoft office's window or safari webpage has something that require frequent visual updates/processing, it will take a lot of cpu and memory

probably those demo unit doesn't have much running on them, so the windowserver don't show up at the top? unless you specifically search for the process in Activity Monitor
