 Bake simple banana cake using airfryer!

Below is a super simple recipe you can bake using airfryer.

Compulsory to have these appliances:
1. Air fryer (duh)
2. Egg whisker (unker bought from kedai 2 ringgit)
3. Cake pan (unker punya free comes with air fryer, non stick, size 6.5" round)
4. Kitchen weighing scale (bought from shopee less than RM10, serious)

Ingredient A
170 gram all purpose flour (cake flour also can)
1/2 level teaspoon baking powder
1/2 level teaspoon baking soda
1/4 level teaspoon cinnamon powder (optional)
1/4 level teaspoon salt

Ingredient B
2 medium eggs (room temperature)
100 gram sugar (normal granulated sugar can already)
80 gram unsalted butter (softened using microwave, then let it cool)
1 teaspoon vanilla essence
2 ripe bananas medium size (lagi ripe lagi bagus, already lembik and hitam also can, kasi hancur with fork)

Ingredient C
180 gram or 180 ml whole milk (room temperature)
1/2 tablespoon lemon/lime/white vinegar

Step 0.5:
Use your finger celup the melt butter and sapu around the cake pan. Note unker punya cake pan is non stick type.

Step 1:
Mix milk + lemon (ingredient C). Kacau kacau set aside for 5 minute. You may notice the milk curdled bit, no curdled also okay. Taste a bit to make sure got rasa masam masam acidic. Reason to have it acidic is to react with baking soda.

Step 2:
Sift ingredient A into 1 bowl. Campur campur.

Step 3:
Mix eggs, sugar, melted butter and vanilla essence using the whisker. Beat the shit out of them for around 3 mins, lagi cepat the speed lagi bagus. Use electric mixer if you have.
Then add in the meshed banana, whisk again until all mixed.

Step 4.
Add in 1 quarter of mixed ingredient A (step 2 dried stuff) and 1 quarter of ingredient B (step 1 -- sour milk) into step 3 mixture. Whisk slowly until mixed (slow slow around 30 sec). Add another quarter whisk again, then another quarter, then another quarter. Note: don't whisk fast, just slowly. As long as all mixed can already, don't over do it (don't take too long too). The mixture will be slightly thick and a few lumps is okay.

Step 5:
Preheat air fryer (all air fryer should have this feature, if not, empty bake at temp 165C 2-3 mins)

Step 6:
Bake the mixture in cake pan at 165C 25-30 min (note you put the cake pan on the wire mesh, don't remove the wire mesh). During the baking, you will smell the delicious aroma (banana + vanilla). At 25min, use a lidi and cucuk the cake, make sure when you remove the lidi it is dry. If still not dry, bake 1 min more, then test will lidi again, then repeat if not done. Won't take more than 30 min to bake all.

Note:
1. No cinnamon powder? don't use also okay -- this is just for the special after taste. If got cinnamon stick, can tumbuk halus.
2. No vanilla essence or pure vanilla extract? don't use also okay. But your cake will smell eggy a bit.
3. You can tambah a bit sugar lagi if you like sweet cake maybe total 150g sugar.
4. No unsalted butter? use normal salted butter but don't add in salt. Your cake will be salty a bit, but still okay can eat.
5. Any type of milk can actually. Non diary also can. But of course not susu krimer manis or susu cair tin.
5. This cake don't have preservative. To store it in fridge, put in air tight container, finish it as fast as possible.

Microwave cannot lah.

Normal oven can (non convection oven). 180C around 40 min

Convection oven. 165C around 25 min (macam air fryer)

Can. Lagi lembik lagi bagus actually. As long as not berkulat lol.
So any uneaten banana you just keep in the fridge until you are free to bake.

Actually... you can, and its much faster too. Just use a silicone bread pan and bake it for 10 ish minutes. And trued it on a cheapo microwave too, not the ones with convection. Just mind the depth of the batter.

Note that you won't have the crispy edges/top

Personally use this if I didn't have an oven, makes baking the cake much-much faster

just need to trim the top as it'll have a dome on it

We mostly use it for reheating stuff like overnight fried chicken, roti canai from morning or even fries.
