Actually why need to add milk/santan/yoghurt into curry?

Has anyone cook without any of them?

Can. Japanese curry no need all those.
Those are to thicken the liquid.

Yes you can just cook without covering to let the water evaporate and it’ll thicken. My maid does that all the time

for every 400 ml water, u can add 50 ml of yogurt+ 50ml of milk

confirmed sleepy after the meal lol

Adds richness and mouthfeel.

As someone earlier mentioned, can substitute via starches like corn starch, potatoes in the curry, etc, although it definitely won't be the same.

You can use heavy cream also.

Go to supermarkets you can find in the milk section something called heavy cream

bugger! put corn starch is big no no... although jap curry mostly use this.

the potato will definitely thicken and reduced the liquid inside the claypot while cook on a slow fire

Personally I wouldn't do it haha.

I think corn starch is used only for those angmoh chip shop curry sauce.

Japanese curry uses roux, which is plain flour + butter.

Sattisorru worth the hype? Seen few time before on Foodpanda/Grab. laugh.gif

Fat give taste.

You can replace with cooking oil, or less oil and still taste good.

Yup done santan-less curries before. Think I had posted a pic of it some years ago. Parboiled some potatos before adding to curry to simmer, disentegrate and thicken the dish. Added more potatos later on for firmer chunks in the curry.
