Without santan or evaporated milk it'll taste like the roti canai curry. Plain and boring.

Yes you can just cook without covering to let the water evaporate and it’ll thicken. My maid does that all the time

I recommend you Uncle Wah Curry Paste. Very easy to cook and taste good also

Adds richness and mouthfeel.
As someone earlier mentioned, can substitute via starches like corn starch, potatoes in the curry, etc, although it definitely won't be the same. |
