Then I wonder what sort of yellow onion in have been using yellow for ABC soup. They turn soft and sometimes disintegrate .

They say is red
But no necessary must always use red

I prefer to put more yellow for the sweetness and mild union flavour. Red sometimes can be to heavy union taste.

There is no hard rules in cooking
It is always up to your preference and taste.
we are not robots.
