Here is what I found on the internet: Buffalo is a type of bovid, but their meat is different from beef in many respects. Buffalo meat has a lower fat content, and its fat is milky white, compared to the yellow-white fat of beef. Buffalo meat is darker in color, and buffaloes, because of their larger size, have harder bones than cows. But from my personal experience, I can tell that buffalo is lighter meat and tastier. You can cook it the same as a chicken because the amount of fat is very similar. I cook chicken on apple woods for the best taste. There are a few best woods for smoking chicken, but Apple is my favorite.
