Running without thermostat, u are safe with the risk of thermastat spoil and wont open. When this happens, coolant cant flow and engine will overheat to the max then the radiator hose can blow and water spill out.
Without thermostat, the engine will warm up slower and the temp will cant be able to always stay at certain range.
