to quit, you can also click on the icon in the dock and hold until a menu pops up. then u can click "quit". cmd-Q is definitely the quickest.
changing icons can be done in a few ways as well. i know 2 ways:
1. find an icon you like and copy it. highlight the thing you want to change the icon and type cmd-I to Get Info (or ctrl-click). in the Info window, click on the icon on the top left, making sure you can see it highlighted, then type cmd-V to copy. voila!
2. use apps. i use pixadex and candybar, imho the best apps to manage your icons.
sometimes, you have to log out / restart for the change to completely take place.
wallpaper? deviantart.com has loads. there's a special section for widescreen.
deleting / uninstalling apps is as easy as binning it. the pref files are still in the library. so, if you're anal (like me) use AppZapper. it won't clear up a lot of space though, as the pref files are not big.
