Regarding the issue of turning off the secondary sim on the Iphone Xs Max HK set, I have tried but there seems to be no toggle/ switch to turn off the secondary sim. Im afraid, the only way to turn of the secondary sim is to remove your sim card. Other suggestions include not keying in your pin unlock code for the second sim when promoted.
Maybe there would be this feature on IOS 12.1 that is due to be released next month, as dual sim features are not available yes on the other ESim models as of yet. But until then, I think you would have to remove your second sim when not in use.

The sim card was included in your purchase because yours was a delivery and hence if you are not using a nano sim, you will need to go to Maxis centres to have it changed. If yours is a recent nano sim, then there is no need to change your sim card.

No.. the sim card is not activated yet. Only one sim card could be activated for one number at any one time. You can keep the sim card as spare.
