After made the payment, most probably the detail of AMEX card has been automatically stored under your Apple profile.
You should remove the card from your profile immediately after the successful purchase (which comes with an email notification). This will force Apple to charge into the paying card immediately, instead of being processed during weekday later.
Apple is one of the merchants famous for manually processing payment during weekday.
I've learnt the lesson ages ago. Since then, every time after purchase something (either apps or product), I will remove the AMEX card from my profile immediately.
Take note that you are not able to remove AMEX card from the profile if it was tied to any subscription plan (such as Apple Music, iCloud Storage, Office 365 etc). Personally, I won't use AMEX card as the monthly subscription plan payment card.
