Which version of Photomatix are you all using? I tried using version 1.2.1 and when I generate out the HDR image, the image looks like that is combined. When I save the image, it ends up being like a normal picture

I downloaded it but I still find that all the HDR images I generate doesn't seem to turn out right when I save the images using Photomatix

What kind of HDR you're looking for? An exaggerated one or a more natural one? Both can be done in Photomatix. And once u brought the generated HDR image to tone mapping, its always different than what you see before.

how many exposures will do the trick? do you guys normally bracket your shots or individually meter off the different areas... ?

You can use layer and layer mask to brighten up the dark area a little.
