in the process of making margarine, they hydrogenise the oil, breaking down double bonds into single bonds by adding hydrogen to the bond
but for some of the bonds, the orientation is opposite of the naturally occurring bonds , which is why it's called trans-fat

margarine has poly and mono saturated fat
butter has saturated fat

your explanation makes me think butter is better than margarine
