the explanation is not correct. All of these modern hoods have condensation screen. The good ones have multiple of them.
The “smoke” is nothing but vaporized organic substances from your food and cooking oil. The screen will condense vaporized oil, in turn the condensed oil will capture the organic substances that creates fumes and odour. Therefore your exhaust should not have visible smoke and there will be very minor smell left at the exhaust. If you burn your food, them of course is another story.
Again, good hoods exhaust does not collect oil after say 3-5 years of heavy use. Indoor exhaust aka circulation ones will have a charcoal filter behind the condense screen to minimize the odour.

3. Pick wall-mounted hoods over anything else.
3. Pick the one that has the most/most comprehensive condense screen
4. Pick the one that can self clean/ manually spray water into the fan.
5. Pick the one you think is from a reliable brand.
