it depends on how the restaurant prepare as well. some restaurant dunno how to prepare those beef and ended up losing the real taste of the beef. i tried many diff wagyu beef places and some r really good, some r just average cause they dunno how to prepare
It won't happen in Japan. Because to sold Japan Waygu, you have to be member of Japan Wagyu Association member. This Association will sent people to evaluate your chef, qualified of sell waygu or not. Only the top of top can serve Japan wagyu. All qualified restraurant will have Gold Medal plate showing at entrance of restraurant. Even Kuromon market that selling waygu stall also have this golden certificate.
Alot restraurant got serving waygu, but those are american / Australia wagyu meat. So taste you eat might feel different.

Among foreigners outside japan, historically only Kobe is famous (for whatever reason). that’s why even today lots of westerners mis-market wagyu as kobe. but among japanese, their so called big three is kobe, ohmi and matsusaka. i’ve tried the first two but no luck to try the third one yet

Do you get the Certificate Card from Japan Wagyu Association? If not means you still have't try the real Kobe , Ohmi , Matsusaka Beef. Even you buy at Supermarket, all Japan Wagyu meat must have Certificate card issue from Association. Even Kuromon Market that Waygu stall also got certificate.
If you saw those Wagyu sold in Supermarket / Restaurant which don't have Certificate means it will be American / Australia one. Because in Restaurant / Supermarket they also label it Waygu only, so as foreigners you will think it was Kobe / Ohmi / matsusaka but actually are American / Aussie waygu.

Japan takes elite food very seriously, Same as Fugu , Black Fur pig (Kurobuta) ..all will certificate issue from association. Only elite can serve it to keep the highest quality.
