not sifu here, but for #1, you need to achieve a small DOF, zoom ur lens to max, set aperture to max (lowest F value), and take the picture.

for #2, i think you wanna do something like take a picture of a moving car and keep the car sharp but the background out of focus? I believe u need to set a moderately slow shutter speed and try to keep ur cam focus on the object.....will need many tries to get a good shot..

btw, im just a n00b... there might be other better ways for #2
