I don't think there is any problem with that hissing sound. I would rather keep for now than getting a refurbished set from exchanging a new set.

Yup you can. There is no sticker type of sealed where you need to cut or tear off.

Go into settings menu one by one and explore what settings are there. Google for tips and trick on iOS 10. As you use day by day you will be more familiar with IPhone and iOS ecosystem. Just to share some of the features I use daily is from home screen pull down to search for anything such as apps or websites etc. when typing firmly press (3D touch) on keyboard to get the trackpad, useful when scrolling back and forth for correction. Double tap the status bar to go top of the page.. just to name a few of the useful features. With 3D Touch iPhone is more intuitive.
