Your credit card information is stored in the secure element of your device (watch / iPhone).
If the merchant's terminal is using a landline (or if they are using a different cellular provider that has good reception in that area) they would still be able to process the transaction w/o problem.
Thats the beauty of NFC payment VS eWallet which requires good cellular reception.
