Stay in Seomyeon, it's central to everything. That Hotel I stayed is Shin Shin Hotel, not bad, highly recommended

2 days definitely too rush. Does your 2 days includes flying in and out of Jeju? I spent 4D3N in Jeju and even that I already feel it is too short.

Anyway, most of the interesting locations like Cheonjiyeon and Jeongbang waterfalls are located on the south of Jeju, which takes over 1hr drive from airport. To make better use of your time, it is recommended to divide your stay between different areas in Jeju to reduce travelling time, I stayed 2 days in Seogwipo and the last day in Jeju town closer to airport.

If you have the time, Udo Island and Seongsan llChulbong Peak are highly recommended

Not for me, I quite enjoy renting a scooter and riding around the island, stopping at various spots to take photos, and trying the Hallasan fried rice

Udo island and Seongsan llchubong Peak can be combined as a day trip as they are near each other

Just go for one which gives you the best price, I used Wiyo, but last time they only have counter in KLIA2 if not mistaken, not sure about now, or you can try Travel Recommend

It is better to switch accommodations as you explore different parts of Jeju, unlike our Langkawi, Jeju is actually quite big and travelling from one place to another can eat up quite a lot of your time.

I don't know how good a hiker you are, but hiking up mt hallasan during winter is quite challenging, more so if you are alone. I drove up to Eorimok station end of December just to experience the snow, and the freezing temperature is already challenging enough for me, so I can't imagine myself hiking up (but then I'm not a regular hiker). I did saw a few hikers starting their hike but they are mainly locals who are probably used to the temperature already

Not sure if it is just me, I also went end of Dec and I regretted wasting money on winter boots, in fact, most of the locals are just wearing normal walking shoe, maybe because it wasn't snowing much when I was there. The coldness doesn't matter much, a waterproof winter shoe might only be handy if it is snowing or raining, to prevent your shoe from getting wet or causes slippery
