You might want to consider taking the morning bus (6-7am) to Kawaguchiko, the view is 3/4 - monday - Tokyo airbnb at Shinjuku

Not so sure about spring time, the last time we went in November, the visibility not as good due to fog from 11:30am-12pm onwards.
