Anyone has any experience how the prepaid package with u mobile works? Seems like a good deal to those who intend to buy outright... you get some discounts plus some airtime to boot.

If you're gonna pick a telco based on plan, then looks like U Mobile and Celcom have the more affordable monthly commitments. Maxis starts at 128 per month and surprisingly this year, DiGi's offering is sky high as well.

Not surprising actually, given that many have left maxis, and many don't see the iPhone 7/7 Plus as a worthy upgrade from last year's 6S/6S Plus

Based on your post, I'm assuming you're happy with DiGi's services as you have no plans to port, but bear in mind two years is a long time. Compared to buying outright and your current plan then the alternative is

RM2,863 (RM2,701 + GST 6%) + (RM146 x 24) = RM 6,367 with contract, 15G data (is there a +5GB more? I don't know), unlimited calls.

So that's a RM148 difference for the additional data for signing a contract with a service provider you plan to stick with anyway.

It is impossible for them to "pakat" because we have anti-competition laws in Malaysia. You cannot pakat with your competitors or you may face legal action. But I agree with your views, if you don't want to sign contract with telcos for two years, buy the phones outright.
