Yes, you can schedule it

Go to Settings - Update & security - Windows update - Advanced options

Change Choose how updates are installed and select Schedule a restart.

When you set as metered connection, Windows assume you are using a limited internet quota thus it will stop the update and let you download at later times. This applies to Wifi connection only.

Did you clean install your windows 10 or upgrade from windows 7? Your installation has become corrupt due to an interruption or failure during the update process.

Whaddaya mean by conventional HDD? I'm on a Lenovo notebook and not on SSD if that's what u mean...

Had wanted to do a clean install but nowadays these notebooks come preinstalled with Windows and they don't give installation discs and drivers,etc... So if I clean install and it couldn't find drivers for the onboard stuff like Intel chipset, LAN/Wifi/bluetooth, graphic card etc, it's gonna be hellish trying to recover everything

And yes, it does take 4-6 hours to update/upgrade just like the screenshot...

Conventional HDD is normal HDD. What's your notebook model? Your Windows definitely need a clean install.

This is the drivers for Windows 10 for your laptop. Is your windows 7 genuine version ? If it's genuine, follow the instructions here and activate using the Windows 7 product key according to the instructions here.
