Conversion Audio/Video format CONVERSIONS, How to Convert/encode/rip etc

Hi, I've scrolled through the thread but couldn't see anything like what I wanted. Here's what I wanna do:
My DVD has 3 chapters (small ones). I want to rip and convert chapters 2 and 3 into VCD. How do I do it?

Guys, I'm trying to use Avi2Dvd to convert my videos to ISO then use Nero to burn to DVD. However, the conversion stops after a few minutes and I have no idea what went wrong.
