What exactly is Ipoh White Coffee?

Is it the way it is prepared, or is it that the bean is white in color, or what?

Went to a kopitiam, and in the list, there's this option of ordering Ipoh White Coffee O (without milk). So ordered, and I got black coffee.

"Lighter roasted coffee also means more caffeine. Caffeine is burnt off as the coffee is roasted, so the lighter the roast, the stronger the kick because the less caffeine has been burnt away."

Agree?

The acidity level of the coffee is what gives the bitter taste, right?
Which variant would be more acidic -- arabica/robusta?

Any physical shops to recommend in getting the coffee paraphernalia? Like the ever elusive Moka pot, espresso shot glasses, tamper, etc....

Are you asking as the barista (how to prepare)
or as a consumer (how to drink) ?

Hi ymeng85! Asking as a preparer

Then yes. This "mixing" is done at the initial milk pouring stage making sure the espresso and milk is well incoporated
If not, you may taste a bitter-ish first sip due to the crema of the coffee floating all the way to the top and not mixed with the milk foam

Aaaa it is during the pouring! Tried earlier, but was literally stirring with the stirrer!

If I were to get single origins beans, like from Starbucks Reserve, what would do it justice?

French Press or Espresso?

IMHO, whatever you like. You are making the brew for your own consumption (I believe) so brew it as you would enjoy it the most.

That being said, the common position is that lighter roasts do better pourover/filter/syphon possibly French Press/Aeropress. Espresso you will often see darker roasts and blends.

You should seriously consider single origins from smaller, independent local roasters; better quality for lower prices. Also support your local businesses.

Thx for the input! Dunno where I got this mis-conception, but I used to think that espresso trumps french press when it comes to coffee. Glad to know I am wrong!

I agree with sourcing single origins (or basically any kinds of coffee) from local roasters. The reference I made earlier was to enquire on the preferred methods for single origins, and used starbucks as an example

On the coffee taste profiles, e.g. berries, citrus, etc.. is the taste to be found once it hits your palate or after it's passed through your throat?

Also, don't be too dependent on the roaster descriptions, unless you know they are reliable
Drink around and try same type of coffee from more roasters...maybe some other's you'll be able to pick it up

Try any natural processed Ethiopian you can find around. Start there  biggrin.gif

This can't be further from the truth! Usually what I would do is sip, and then teka. Once done teka, i read the desc. Then i see if i can locate the taste profile.

Most of the time, either teka tak sama, or cannot teka at all! Desc say berries la, earthy notes la, etc... taste the same to me!

At this point, i can appreciate the aroma, but taste memang cannot, except for citrus-y and grass-y, lol

Will try your recommendation, and start from there
