Agree if they don serve the purpose...why bother go back to them again...they are many good roaster out there that would take their place with good service biggrin.gif

Agree with this time frame....Espresso is always at it peak 2 week after roast date, sometime 1 week also feel not enough which based on my observation and try out...after when oil is gone, it feel like kopi O, in which you can mix with creamer and condense milk to get better out of it biggrin.gif

Guess good partner pay off...a win win for both parties... i used to have good relationship with one of the cafe owner due to regular patron customer buying bean from him (Last time when i first started my coffee journey) ... occasionally i get free cupping and lesson from him .... but sadly, i no longer go there because his beans are getting more and more expensive (After wonder with other source) and he move to a new spot where it is so hard to find parking....

Well, difference is one hole machine tend to have lower steam power then 3 hole. Even so the technique to rolling of both are different. With one hole you need to rely on the skill of beat up and wall hugging (Depending on the pitcher wall to give your milk a nice swirl to process for microfoam) while 3 hole, tend to be more beat up and milk tumble (Depend on the steam power to beat up the milk from below to give a nice milk tumble and roll to process for microfoam)

Yeah, i know is a weird term....that what used general to explain in layman term

Beside, single hole takes longer time to forth a milk cos it depend on the roll usually you get under froth most of the time while 3 hole more consistent and faster but sometimes tends to over forth the milk leaving a blob of microfom if you're not careful.... biggrin.gif

Man, speaking of milk frothing it been while i molest my machine hard black stick up lever.... laugh.gif

1. 64mm burrs is the minimum commercial standard.
You know you have a dependable and trustable taste when your grinder is that level. That helps you to hone skills rather than figuring out how to keep consistency
Maybe new technology has enabled small burrs to hit the same quality these days so YMMV
My progression was from a eBay 10yrs old Gaggia Evolution. Bad condition but fully functional. Most important? 58mm brass portafilter. This taught me distribution and tamping techniques that i still carry forward to my cafe today
Paired this with again, another eBay bid 64mm SanMarco90 all the way from UK

Then I moved to an SM Oscar 1. HX and stronger steamer taught me how to steam and gauge temp with hand better. It's a 4-hole steamer, pretty close to commercial machine level already. Forces you to finish up within a 8-10s steaming window. Kept the same grinder

So I would say if you can, get secondhand or save up. Espresso is not meant to go budget. Avoid all the hassle of pressurized portafilters, steam pressure brewing (instead of pump pressure), no proper steam tip unless you're a person fond of hacking and modifying. The machine will give you a frustrated journey and may make you give up this hobby halfway thru  biggrin.gif

My brother had come a long way, i remember the beginner process had come a long way, Starting with my rancilio to SM Oscar 1. now with mod .... Damm~! still love my mod but if only coffee beans are abit cheaper at my disposal..... brows.gif

Main importance is you milk froth and the separation of the coffee (abit of fake crema, plus maybe some cocoa powder will help)

Well the Nouva i bought was 2nd hand from a cafe owner (which he upgrade bigger machine with 4 E61 groupe head, but his shop close down after the upgrade, sad stories )....and it serve me well till today but my actual dream was to get rockets when i have the enough fund.

Well it was in my dream to get a rocket machine since i started this hobby. never this day would come, but i still short of cash abit to get the machine that why im selling my mod Nouva to top up the machine..... sweat.gif

Thanks for the encouragement guys but im still awaiting for some cash to drop in then only i can buy the Rockets. Selling espresso machine is hard even to extended selling mod machine even harder.... just pray i got buyer for the machine

Yup, Agree with ymeng, it more of consistency of each shot rather then doing any better then each other. If you want oscar to hit with better consistency (slight improvement) then default setting, you need alot of upgrade.... which consist of tear down the machine, doing internal upgrade (possible need major over haul) and rebuilt back the machine in the process you might break something (like i break my steam wand copper pipe 3 times before make it right and it took me about 2 week plus for import copper steam pipe from italy)...and it takes a lot of time to do it plus you might not know if the machine is worth it to sell or not since modification is done on it.....
