We need to ask this thread mod first before V3 is release....else it would be confusing to have V2 still open for answer.... Coffee Lover v.2 Thread, Let's Share!

QUOTE(Dan430 @ Aug 15 2017, 08:47 PM) There are many other options of coffee roasters around. i would be pissed too if that happens to me. but coffee needs to degas so i think your dates of roasting and receiving is acceptable. but they took a week to roast your order after the payment! Agree if they don serve the purpose...why bother go back to them again...they are many good roaster out there that would take their place with good service if they don't treat a customer right move on and try other local coffee roasters. Why no look for Ymeng ..... he got a cafe and he is a roaster too This post has been edited by d33pbluez: Aug 16 2017, 04:21 PM |

QUOTE(ymeng85 @ Jan 18 2018, 12:47 AM) Disclaimer: Based on the coffees I roast Wassup guy, I'm back Filter roasts - peak 5-7days after roast. Start deterioration after 2 weeks. Almost tail end of flavors after 1 mth Espresso roasts - peak 7-10days after roast. Good up till 1.5months old. Dark roasts will retain it's "flavor" much longer (not much to lose i guess Agree with this time frame....Espresso is always at it peak 2 week after roast date, sometime 1 week also feel not enough which based on my observation and try out...after when oil is gone, it feel like kopi O, in which you can mix with creamer and condense milk to get better out of it |

QUOTE(Castreal @ Feb 8 2018, 01:28 PM) haha, I've been searching for more than a year already, some more called up F&N to see if I can get from them, but unfortunately they only supply to businesses (you have to fill up all sorts of form regarding your business and registration number stuff). Guess good partner pay off...a win win for both parties... i used to have good relationship with one of the cafe owner due to regular patron customer buying bean from him (Last time when i first started my coffee journey) ... occasionally i get free cupping and lesson from him .... but sadly, i no longer go there because his beans are getting more and more expensive (After wonder with other source) and he move to a new spot where it is so hard to find parking....So I found a small Café near my workplace that uses Barista Milk. Had some interesting coffee chat with the owner the few times I patronize his place, we both source some of our stuff from the same vendors, so had a bit to chat there.. Then I asked if I can get the milk from him, and he said anytime! QUOTE(Tikietic @ Feb 8 2018, 01:58 PM) some beans will leave the entire puck sticking on the grouphead shower screen.. that's more annoying lol Lolz.... i guess you had knock before lock it into machine... It happen to me before once, and i knock it before lock it into the machine when i remove the portafilter, the whole puck just stick on the grouphead |

QUOTE(qqmeng @ Feb 23 2018, 11:25 PM) My steam wand has got only one hole instead of 3 or more... i m using breville barista express. Well, difference is one hole machine tend to have lower steam power then 3 hole. Even so the technique to rolling of both are different. With one hole you need to rely on the skill of beat up and wall hugging (Depending on the pitcher wall to give your milk a nice swirl to process for microfoam) while 3 hole, tend to be more beat up and milk tumble (Depend on the steam power to beat up the milk from below to give a nice milk tumble and roll to process for microfoam)Any major different between the no. of hole in the steamwand? Yeah, i know is a weird term....that what used general to explain in layman term |

QUOTE(qqmeng @ Feb 28 2018, 04:26 PM) I think thts the reason why i m still finding ways to froth the milk. Beside, single hole takes longer time to forth a milk cos it depend on the roll usually you get under froth most of the time while 3 hole more consistent and faster but sometimes tends to over forth the milk leaving a blob of microfom if you're not careful.... Thanks for the head up. I will try harder...... 😅 Man, speaking of milk frothing it been while i molest my machine hard black stick up lever.... QUOTE(Tikietic @ Mar 6 2018, 10:31 PM) Hi, Are they available store wide ? Problem with this "professional" milk is the availability and they are hard to come by.... Just like the magnolia barista milkJust tried this milk today.. It tasted a little more creamier than the pink-box variety. This is UHT recombined milk and it froth well and able to hold the microfoam for the whole duration the drink is consumed (~30mins). The microfoam does have this silky sheen to it.. The pricing is really attractive, even amongst its peers(aka UHT). So for cafe owners or home users who would like to explore cheaper alternatives that won't hurt the pocket/wallet/P&L, you may give this a try. And it stores(and aged) like UHT too.. [attachmentid=9637926] Am sure the word "Barista" sure catches some attention here.. lol QUOTE(faiz293 @ Mar 7 2018, 12:29 PM) Guys, how much milk do u use to make latte art? do you mean you milk is sinking leaving a blob of froth ?I have 600ml pitcher. By the time i pour the froth milk into the cup, the milk is finishing already and i get thick foam.. aduuuii.... I use around 250-300 ml of milk into 2 shots of espresso This post has been edited by d33pbluez: Mar 7 2018, 11:51 AM |

QUOTE(ymeng85 @ Mar 22 2018, 01:27 AM) One tip to keep in mind essentially - You know there's alot of information out there written by many other cafe owners, champions, consultants, universities all around the world My brother had come a long way, i remember the beginner process had come a long way, Starting with my rancilio to SM Oscar 1. now with mod .... Damm~! still love my mod but if only coffee beans are abit cheaper at my disposal..... And the good thing is, at the commercial level, there's a lot of standardization or industrial standards That in mind, there are a few features that you would want to get on a minimum to enable you to harness and apply those knowledge already readily available out there Espresso Machine 1. 58mm brass portafilter - I can't emphasize this enough. The #1 most common size even all the way up to the most expensive machine Everything is based off this - tampers, filter baskets, pressure checker, shower screens, grinder holder. The brass also holds up heat way better to ensure less temp drop throughout the shot. This means whatever technique you develop from this setup will never go obsolete or the need to re-learn as you upgrade 2. Proper steam tip Not those plastic panarelo wands or shorter low steam powered ones. Try to hack/upgrade if possible Grinder 1. 64mm burrs is the minimum commercial standard. You know you have a dependable and trustable taste when your grinder is that level. That helps you to hone skills rather than figuring out how to keep consistency Maybe new technology has enabled small burrs to hit the same quality these days so YMMV My progression was from a eBay 10yrs old Gaggia Evolution. Bad condition but fully functional. Most important? 58mm brass portafilter. This taught me distribution and tamping techniques that i still carry forward to my cafe today Paired this with again, another eBay bid 64mm SanMarco90 all the way from UK Then I moved to an SM Oscar 1. HX and stronger steamer taught me how to steam and gauge temp with hand better. It's a 4-hole steamer, pretty close to commercial machine level already. Forces you to finish up within a 8-10s steaming window. Kept the same grinder So I would say if you can, get secondhand or save up. Espresso is not meant to go budget. Avoid all the hassle of pressurized portafilters, steam pressure brewing (instead of pump pressure), no proper steam tip unless you're a person fond of hacking and modifying. The machine will give you a frustrated journey and may make you give up this hobby halfway thru QUOTE(SticH @ Mar 22 2018, 07:21 PM) Main importance is you milk froth and the separation of the coffee (abit of fake crema, plus maybe some cocoa powder will help)This post has been edited by d33pbluez: Apr 2 2018, 04:59 PM |
