And I won’t be surprised since similarly it is very hard for me to differentiate 16bit FLAC VS 24bit lossless music since the most important aspect is the mastering/mixing of the original recording. It should be the same concept for DD+ VS TrueHD. If their original mixing is done very well, you should hear very little difference. However if you are comparing physical Blu-ray Discs to streaming or even ripped/downloaded 4K/blu-ray, I do hear a difference - physical discs sounds way superior.
I won’t be using the Nvidia for gaming at all either, I already have a PS4 for that. The only reason I’m considering the Pro version is because of the bloody USB port that the normal Shield lacks

Did you face any hanging/stuttering when playing 4K files (40-80gb size) on your Nvidia Pro via usb external hard disk?
I think it makes sense to consider netflix / streamed Dolby Atmos for my future purchase, will be on the look-out for this.
I have no game console currently but do enjoy playing some casual games on the Shield which is why I want my next box to be better at gaming. I don't have the pro, just the plain Shield 16GB but the old model so it comes with a couple of USB ports. There is absolutely no stutter when playing large 4k files on the Shield (tried up to 80gb before) but files sit in a NAS so via Ethernet cable. Have tested USB drive before but only 30-40gb files and not frequently, but I didn't have any issues before. The Shield is a beast in this regard compared to any other TV box. BDMV files - sometimes it takes more time to launch at the beginning but once started will be smooth.
Maybe you need to check your hard drive speed and USB cable version also, I had a Minix U1 previously and it was quite good and didn't stutter or hang.
