As of now, many resellers have ample stocks at hand. Even telcos have ample stocks at hand. It would be much faster and not to mention much more satisfying to walk in to any reseller and buy from them.

To me it is better to buy from apple online or official distributor rather by Telco. More easier and faster to claim warranty compare from telco set

you can't cancel the order once it has shipped.
once delivered, there will be an option to request a return.
so you can opt to do that.
but, there is a 15 or 20% restocking fee they charge for iPads and iPhones.
its in the fine prints and i did not know that until recently. 

It only applies to returns and not 1 to 1 exchanges. Like your case it was a genuine fault with the phone and you got a replacement. The returns here are you are returning the phone for refund with whatever reasons you have. If I were Apple, I would do so too. Its an open box and used unit anyway  after you have unsealed the box and activated it and its not fair to pass it off as new to another customer. Imagine If everybody returns and gets refunds, Apple staff will get their hands tied handling such requests with whatever reasons like wrong capacity, model and colour.

I feel the iphone 6/6s cases and backcovers doesnt fit the 6s/6s+ perfectly. It does fit but not perfect.
