Sample below is from Tune Protect - Travel PA. They only exclude extreme sports and activities, and the below is what they mean.
So based on what i understamd hiking or skiing is NOT excluded as long as it is either open to other people or it is guided by experts. so in your case you don't really have to worry.
Extreme Sports & Activities:
Shall mean any sport or sporting activity that presents a high level of inherent danger (i.e. involves a high level of expertise, exceptional physical exertion, highly specialized gear or stunts) including but not limited to big wave surfing, canoeing down rapids, cliff jumping, horse jumping, ultra marathons and stunt riding. It does not mean usual tourists activities that are accessible to the general public without restriction (other than height or general health
or fitness warnings) and which are provided by a recognized local tour operator but always providing that the Insured Person is acting under the guidance and supervision of qualified guides and/or instructors of the tour operator when carrying out such tourist activities

conventional insurance or takaful, all same same. if you insist, you can go for etiqa takaful. the previous travel insurance i bought was from etiqa takaful. convenient and easily bought online.
you can always buy travel insurance after booking the trip. depends on what you believe. some thinks it's not necessary, some believe better to be safe than sorry. what my friend worry about is more of the bigger thing like what if you get sick in those countries and the medical treatment is really expensive, etc...
i check with insurance agent and bought from MSIG which cover mountaineering at mountain below 3000m. but i just release that the mountain i'm climbing is 3700m
