Something most common in food industry although some for industrial refrigeratiion purpose although the safer option is using normal air. But c02 and nitrogen is for cooler temperature and as not oxidizing gas (that what they instructor say anyway...). To know the product, you need to experience it So find one in nearby food processing plant and ask them to let u in...
