I have an old SSD, the corsair F120.

Is it worth it if I upgrade to a newer faster one (was looking maybe at the Samsung EVO)??

plus, my old SSD only has 120GB, might get a slightly bigger capacity (240GB maybe) as I'm only gonna run 1 hard drive for my htpc rig.. will I notice any gains if i do so?

running on a P67 motherboard (Maximus IV Extreme)..

to be honest is not much of a difference

Around +10~20% performance for read/write activities.
By upgrading to a larger capacity, you are able to store more files compared to 120GB.
If its mostly for watching video, better get a normal HDD Western Digital 3TB Green Caviar for RM300 at Garage Sales, worth the money + store lots of videos/music/etc vs a 120GB/240GB SSD.

If you are an artist definitely need to upgrade to speed up multitasking jobs. Despite as a casual user not necessary needed to spent extra SSD. Stick to your SSD at the moment.

I am using one of the cheapest ssd available in the market,, Transcend 256gb for my c drive..

so far i am very happy with it.

For me is better to get cheaper 256gb and invest the money on additional 2tb sata3 internal hard drive or perhaps nas storage for your case

If I were you, I upgrade to M.2 SSD drive, much faster compared to SATA 6Gb/s. Your computer must have M.2 port.

Buy another new/used F120, run Raid0...it's cheaper method & fast too...

Nope the motherboard doesn't have an m2 port unless u buy the adapter. Anyways i got rid of the motherboard and got another 1155 system, and went with an m2 plextor.

Perhaps run an AS SSD benchmark to see what your current SSD speeds are?

m.2 more worth it to get on skylake with enough lanes for x4/NVME. a normal 256GB SSD should suffice?

i would say upgrade SSD to laptop, you will see the huge performance increase, for powerful desktop PC, is not necessary, it will help on game loading speed and video conversion only, normal desktop operation hardly see the different.

Having SSD is great experience on desktop gaming

m.2 not necessary means pcie ssd right? you can still get the sata 6 interface on M.2 as well....that was the mistake i made earlier when i purchased m.2 ssd but it is actually not pcie...
