What lag ?? Samsung touchwiz had improved a lot since Note 3 and S5. I don't observed any lag in my previous Note 3 ??
All these talk of lag is no longer a serious problems on the later Samsung devices
You can always replace Touchwiz with any 3rd party launcher if you find TW is laggy

Use Class 10 memory cards...

Try use Original Samsung Sd Card to your Note 3, u will find much improvement without lagging issue. without phone overheat issue too ~ 

HTC M8 will suit you...no lag....

I have more than 2000+ picture and plenty of hd vids in my 32GB Samsung Evo microsd, and not feel any lag. Open in sec. I can browse all the photo in the gallery without any lagging or delay.

I have no experience w S5 ( just 10 mins at retail) but honestly can say Note3 doesn't lag like the way you said it

U know wut im use my note3 since begining i hav never experience ur so called lag onmy gallery and i have a lot of apps on my sdcard and all my pic on my sdcard...
Couple of possibilities
1. I do admit im using a rm400++ sandisk extreme pro sdcard 64gb...no lag at all perhaps u use slow card is the problem...
2. Sd card prob maybe like file sysmtem erro or things like that...
3. To many program loaded at the time u use gallery
4. U re a ifag troll cause i never heard these problem on a note3 as well frm other note3 owner even i have use for so long still smooth
