Welcome to the family. Be sure to add yourself in the list in OP.
For ROMs and kernel though, it's all about your own preferences. But my recommendations are Omni, AOKP & ParanoidAndroid. About kernel, just stay at stock as possible. Maybe if you wanna play around, there are few, ElementalX, faux & franco.

Tried the Beta 4 for few days and it's just good to me. I really like the quick setting toggle, makes life easier. But still, it's not fully PA since some of the popular features haven't fully integrated.

Any ROM recommendation? Want something that has RC/Milestone release that's stable enough for every day usage and don't require often flashing. Yeah you should flash.

And for ROM, stability and releases varies depends on the development and developers. For best updater like stock ROM, Omni has implemented the open delta which almost same like stock updater. PA and Slim also have their respective updater.

Helium is possible to back up your apps without root so give 'em a try.

AOSPA currently implement slowly their features like PA Preferences, PIE control and so on. They might release it in near future.
